We are delighted to announce our new Creole Cooking Class. Creole cooking originated in New Orleans using a blend of French, Spanish and South American food influences. Blending from refined European techniques, Creole cooking incorporates local and diverse ingredients and significant use of tomatoes and shellfish and gentle spices. Key dishes include rich, roux-based gumbo, seafood-heavy jambalaya, and dishes featuring the "holy trinity" (onions, celery, bell peppers). We love the idea of cooking Creole food here, especially with the abundance of delicious fresh seafood here in Howth.
Julie, our American Colleague has been a big fan for many years of Creole food and has been on our backs here in the school for ages to run a class and cook up a Creole storm - so we're really looking forward to this one and hope you will too!
